Fix for an Over-Proofed Dough?

Is there a way to fix an over-proofed dough? Or, do you just have to throw it away? I’m guessing that for the under-proofed dough you simply let it proof some more, right? Thank you so much for your clear and helpful videos.

Having some trouble giving you the links, but at least two sites (Modernist Cuisine, King Arthur Flour) have articles on how to rescue some but not all types of overproofed bread dough.
