Question on mixer speed and rolling out the dough
I’m new to making yeast dough, so please bare with me🫣
When the recipe states “mix dough”
What speed number should I have it at..2 on my mixer?
Should I lightly sprinkle flour on my counter before rolling out the dough?

1) whenever adding flour or the dry ingredients of a cake to a mixer bowl, start with low speed (to prevent the flour spraying out of the bowl., onto or the counter);
2) once the dry ingredients of a yeast dough are incorporated, turn the mixer to a medium speed for the kneading process.
By the way, yes sprinkle some flour in the table or board for rolling out, it’s called “bench flour.”
