i am painfully hot chili-averse, so i might go with pimenton de vera or a little sprinkle of chili flakes.

A few thoughts for your chile selection.
• in any recipe, if an ingredient is only specified by name without more descriptors, you can vary the ingredient by what you like, have on hand or can find in stores.
• there’s a chart called the Scoville scale (readily available on the web) which lists chiles and hot sauces from mild to burning.
• A few at the lower end and usually available in store are guajillo, jalapeño and chipotle. Just above them is Serrano.
So start with one of those or something stronger (if you know you want more heat).
Enjoy this dish - it sounds like good comfort food!
