PLSE. HELP ME TWEAK A RECIPE FOR DATE RAVIOLI
the author fills their ravs. w/ dates, cinnamon and cardamom, in a sauce of EVOO ,parmesan and walnuts.
So far i'm thinking a filling of dates, bacon bits, taleggio cheese; w/ the same parm walnut sauce plus flat parsley. what do you think? better ideas? thx much, mindy

Bacon - I can see it adding a nice savory note.
Taleggio - a good cheese, but mild and so maybe overwhelmed by the other flavors. Or, choose one of the Parmesan and Taleggio. Or, leave the cheeses out of the sauce and filling, then use them separately as garnishes and see which one works better.
Other additions for umami and protein - drizzle with a bit of tahini sauce or sprinkle some cooked garbanzos in - these are often used in recipes with dates and work nicely.
