This recipe looks so delicious, but I don’t have an Instant Pot.. how long would the cook times be for a slow-cooker or oven method?

I would opt for the oven method: soak and cook your beans with whatever method you prefer. The idea is to have cooked beans to proceed with the rest of the recipe. Then proceed with steps 4-10, using a dutch oven or skillet. I prefer the dutch oven because once the cooked beans are added (step 10), you can cover and pop the dutch oven into the oven for about 2 hours at 300-325 degrees F. Then uncover and cook another ~1 hr or so, to thicken the sauce.

I guess you can try and do this in the slow cooker for the long and slow cooking part. It may involve using an extra pan, unless your slow cooker has a sauté function.
