No fat on my duck but I knew that

I thought I bought a package of cut up, 1/2”-1” raw duck meat and was planning to make Korean duck tacos with it. When I defrosted the package, it turned out to be 4 whole duck breasts without the fat. What would be the best way to cook the breasts for my tacos? Pan sear in some leftover duck fat, then slice or chop and sear quickly in the duck fat? Getting ready to marinate either way. I’ve only ever pan seared them whole with the skin on. Thank you!

I think you are on the right path. I would slice thin, season, and stir fry. Don't over cook it. Rare is probably best.
