I really want to try this recipe, but is it really only 1 cup of diced chicken out of a whole rotisserie chicken?

Just put in as much or little as you think your dinner guests will enjoy.

These sort of recipes are flexible about amounts based on the appetites of the actual eaters. Some people like chicken caesar salad mostly as a chicken dish garnished with a few lettuce leaves. Others prefer a salad with just a few morsels of chicken. Just do what you think is most appropriate for your particular group.

Two easy fixes.

If you’re concerned the salad won’t have enough chicken, just add more to taste.
Then serve to more people as a side. Or sane number of people as a main.

If you’re worried about buying a whole rotisserie chicken for just one cup of meat, you could use it over a few days for another chicken recipe and/or put the meat in the freezer for later use. Either way, use the carcass to make soup.

So I gave a long answer and maybe TMI.

Short answer - there’s a wide range of chicken volumes in Caesar salad recipes.
