Work lunch ideas that can last at room temperature?

Hi there. I need help coming up with lunch ideas for the office. I won't have access to a fridge and have never had success with lunch containers that need icepacks/prep/cleaning. So: what are some things that can be pre-made that will last for at least 5 hours at room temperature?

I keep some shelf stable items in my office for days when I am caught with little time. If you have the ability to store them & a few implements you can be quite creative. I keep cans of tuna, salmon, white beans, chick peas, olive oil, red wine vinegar, salt & pepper. If I know in advance that I might be very busy, I pack some good bread & ripe avocados. Good luck.

Try Vietnamese dishes (which were created in a hot climate with little to no refrigeration). My parents would bring leftover dinner (grilled meat, stir fries, stews) with some rice and that was their lunches. Here are some other Viet dishes that do not need refrigeration, though I would consume all of it by end of lunch and throw out what you don't finish at the end of the day:

-vermicelli noodle bowls with grilled meats or tofu. Keep the sauce/vinaigrette separate. Ingredients can be prepped the night before and then tossed together right before you eat.

-salad rolls: similar to the noodle bowls, make them in the morning, wrap well and they should hold until the end of the day.

- steamed meat buns (banh bao): filled with ground meat, onion, peas, cloud ears, and a wedge of hard boiled egg or a quail egg. These are the ultimate on the go lunch. Make a batch and freeze them. Take out for lunch whenever you want. Eat them warmed in the microwave or at room temp.

-empanadas
- aloo gobi
- chana masala

The main idea for freshness, taste and safety is to prepare and freeze your lunch, take it out of the freezer on your way out the door and let it defrost at work.

They are mostly sandwiches and there are websites with lots of ideas - which fillings work best, which not. You can pack them cooked and ready to eat. If, by chance, you have access to a toaster or microwave, you could pack some raw ones and toast or cook them just before eating.

For dessert, you could pack individual portions of frozen fruit or cake, which can also thaw as you work your way through the morning.
