Wonder if this could be made in eight wells of a muffin tin. Thoughts?

Most cakes can be converted to individual portions, but these might be hard to remove intact from a muffin tin.

Either cook (& serve) them in individual cocottes or line the muffin tin (parchment paper, foil) to allow for easy removal.

PS - baking times will be shorter. Start checking for doneness sooner than for the one-pan cake (maybe halfway through original timing).
