Wondering if the baking is done with convection -- I've made this twice and it takes 50 minutes to completely bake although the recipe states 30/35min, any thoughts?

"Hi! A few things could be going on. The oven may be a bit too cold or there could be poor circulation, or the pan could be a bit smaller than suggested. However, the oven could also have been too hot when developing the recipe!"
