Morton Tender Quick ingredient

If you omit the Tender Quick, you will have essentially pork meatloaf. The Tender Quick gives it the pink color and cured taste which people associate with Spam. If you are sensitive to nitrites, then this is not a recipe for you, unfortunately. There are no substitutes for curing salts that will give you the same results. Even the so called "uncured" meats are still produced with naturally occurring nitrates and nitrites, using things like celery juice and beet extracts. It's still the same chemical at the end of the day, no matter where it was derived from.
