Is the can of coconut milk full fat or lite?

I agree with KLS. I've tried both regular and low-fat coconut milk in a number of dishes (but not this particular one) and the latter is really sad. Some might even call it a waste of money or pantry space.

That said I wouldn't pour the entire can of coconut milk into this dish. I'd probably pour in half, taste, then decide whether or not it needed more. It's main purpose is to add some richness. In my mind full-fat coconut milk plus some water (if necessary) is way better than low-fat coconut milk.

But it's your dinner table, do what you think your dinner guests would like.

Yes to KLS - I've had similar experience and vote for Full Fat.

Also, regarding 702551 comments on not using the whole can - this recipe makes a lot (almost 3 quarts) and can probably benefit from the whole can. But if you're concern about the end result being too loose (or gloopy), then start with half a can and add to taste.
