You could make the spatzle and caramel used onions and either set them aside separately or assemble with the other ingredients (except for the crispy shallots). Store mixture, covered, in fridge. Day of serving, remove from fridge and bake. Meanwhile, prepare the crispy shallots and - when dish is cooked - remove from oven, garnish and serve.
