From the photos, it looks like the potatoes are peeled but nothing in the recipe says so.

Good catch. I think the non-peeled potatoes were chosen for styling purposes but this recipe would work exactly the same if the skin was left intact. I would just make sure to scrub the potatoes to remove any dirt.
