vacuum sealing caponata for storage

Can you vacuum seal the caponata and if so how long will it last in the fridge if stored that way?

I think you can absolutely vacuum seal caponata. I will say, I really think you'd only be getting an extra couple of days out of storing it in the fridge (7 days total). However in the freezer you could likely push it to 8 months or maybe a year when stored properly.

Haven’t done it, though made caponata’s many times.
Would be wary as it has olucevoikbsnd garlic (onion source of botulism).
Would indignities a reliable source (like a county extension service).
If you have a lot of one ingredient and this is prompting the question , unwound store the ingredients separately.
Then cook just before you plan to use & store max I’ve week in fridge.
