You could also use cane syrup if you can find it locally. It has a caramel color and a bit of a molasses taste which I think would be great with these cookies.
Just spoke with Nea and she had two pieces of advice:
1) Since its only 3 tbsp, it is likely you could just omit it entirely but of the praline will melt into caramel. Though this likely to happen to a certain extent anyway.
2) You could replace with maple syrup but as its less viscous you should use 2 tbsp.
Yes. You can substitute Lyle's Golden Syrup. It has a more caramel like flavor. Liquid honey has the same texture as corn syrup. I sometimes will sub honey for corn syrup.
