I don't think I would add bourbon to the cookie dough because I'd be worried about over-hydrating it.
Instead you could create a bourbon icing with 2 cups powder sugar, 1/4 cup bourbon, 1 tbsp melted butter and a pinch of salt. Just make sure whatever booze you use is delicious!
