Dish that holds moisture well for several hours
I'd like to make a Southwestern dish for an upcoming church breakfast but want something that won't dry out if left on a warming pad for 2-3 hours. I'm considering either a lasagna, chili mac, or a breakfast casserole with eggs and hash browns.

To the question you posed about retaining MOISTURE: most of the dishes you named will work, especially if you make them with more liquid than usual (the pasta dishes), or add a sauce (the eggs and bacon). Also, various stews work well.
