I've looked at a few different recipes, and there's quite a full range on recommended temperatures. What works best?

Pancakes, for the most part, should be cooked at medium or above. But it's as much about your comfort level as it is about the recipe. If you cook pancakes at medium high, they'll be darker and a little crisper but you have to turn them quickly and be careful not to dry them out.
