they're oat grains (groats) that have been flattened under heavy rollers & then lightly steamed & toasted
...and if you get 'natural,' 'old fashioned,' or 'thick,' they are true whole grains. They can also be whizzed in a blender/food processor to make oat flour, fresh and low cost. I avoid instant oats which are more processed.
