I have a question about step 3 on the recipe "Crispy Japanese Tofu Bites" from FrancesRenHuang. It says:
"Heat 1 inch of oil in a pan until 375; coat the tofu generously in potato flour and fry it until all sides are golden brown"
Do you mean potato "flour" or potato "starch".
