Favorite recipe for eggplant parmesan?

I'm having my in-laws over for dinner tomorrow night and have fresh eggplant from the farmers market. I was thinking of making eggplant parmesan. Any recipes that rock?

P.S. I love Food Pickle and so appreciate everyone's feedback. It's my favorite resource on the web now! :)

I've often subbed the noodles for polenta. It's really a different taste!
