I have a question about the recipe "Burnt Okra with Sauteed Potatoes and Basil" from thirschfeld. Would this recipe work okay with boiling potatoes rather than russets? Thanks!
Russets fry better than boiling potatoes. Yukon Golds are also wonderful potatoes to fry and still not the same as Russets. Of course you can use boiling potatoes, the waxy skinned like the red potatoes, but you won't get the same crispness you can expect with a Russet.
