I just brought my friends who are new parents chicken wild rice soup. I thought it would freeze well if they had lots of other stuff and it is full of good proteins for my friend who is nursing.
All these recommendations are superb! I also think no matter what you bring it will be deeply appreciated. I remember when our son was born, a neighbor brought over a casserole made with Hamburger Helper. I think it was the cheeseburger variety. Don't laugh -- it so got us through the first few days at home when we were both exhausted, clueless ... and hungry!!! I will never forget her generosity and thoughtfullness.
When my daughter had her first baby I brought them 2 roast chickens, vegetables and oven roasted potatoes, and mac and cheese made enough for two meals as they are all easily re-heated. For dessert I made apple pie. I agree completely with boulangere, delicious meal and can be extended.
Take a look at rayva's question about roasting 2 chickens at once. After my daughter was born, a friend brought me 2 roast chickens, and I still remember how heavenly they were. We had dinner off one the first night, then I pulled all the meat off them, froze some of it, made stock from the carcasses and some vegetables, then turned it into chicken noodle soup. So maybe think about also including some soup ingredients. Very kind of you, you know.
I thought that I would add that the Italian Beef Stew with Rosemary from Amanda's New York Times Cookbook is fabulous! I have made it several times and I am actually having a batch from the freezer tonight. Yum!
I remember every meal that was brought to me after I had my daughter, so I always bring a dinner to new parents. I usually prepare a beef stew or pot roast with a salad. The most important part is a great dessert that parents can nibble on in the middle of the night!
My first question would be is Mom breast-feeding because that is going to give you some answers on what she can eat and not eat. Secret Ingredient Beef Stew is amazing, as HLA says. I would also consider some of the savory tarts on the site.
