Baking an apple cake that calls for apple cider, yet there is none where I live, only apple juice. Will that produce significantly different results?

No, but for better flavor, reduce the apple juice by about half by simmering gently on the stove for a few minutes. Ciders tend to have a more apple-y flavor than juice, but with this substitution you'll be fine. Have fun!!
