The rest time is always proportional to its size. 12-15 pounds should rest for a good 20 minutes. Add time on from there. And be sure to cover it with foil or plastic, then and couple of great big towels to keep in the heat. I use beach towels since this is about the only use we have for them this time of year ; ))
