The pastry can be made ahead of time and stored in an air tight container(s). I don't know what you're filling them with,but that probably can be made ahead, as well.
I wouldn't fill the shells until JUST before service, however. They get soggy quite easily.
I don't see why not! Puff pastry reheats well in the oven, and as long as you aren't in danger of your filling drying out, it's a great way to prepare ahead of time!
