A question about a recipe: Sweet Potato Gratin with Smoked Paprika and Cayenne

I know this may be considered blasphemous to some, but can you recommend a low fat substitute for the heavy cream that will still produce the same/similar result?

Never exactly the same, but I have had success using the fat free half n half. Now fat free isn't calorie free...it uses corn syrup to give the richness, thickness. I know other people have used evaporated milk...but if you need to cut the fat, it works.
