What can I do with leftover pulled pork?

I have over 1 lb. of leftover pulled pork frozen. I wanted to make a casserole with it but I couldn't find any appetizing recipes. I was looking for an idea other than tacos or enchaladas. Thanks for the help.

Pulled pork potato skins! Jazz up the pork skins with some aioli or slaw!

Try making gingerroot's manapua with pulled pork in lieu of the duck. I've done it for leftover pulled pork and it worked quite well. The manapua freeze well, and make a great lunch. http://www.food52.com/recipes/12427_savory_duck_buns_aka_kalua_manapua
