I think I saw this too late :( But if you still have some in your freezer, I would recommend the Cooking for Two 2009 cookbook, which has a trio of recipes that you can make with leftover pulled pork:

You could adapt this cornbread tamale pie recipe, using sauced pulled pork for the filling - I haven't made it yet, but looks good and easy: http://www.bonappetit.com/recipes/article/cornbread-tamale-pie
So many possibilities, assuming it's not already sauced. Hash, tacos/burritos, enchiladas, fried rice, sandwiches of many kinds (banh mi, tortas, grilled cheese), incorporated into baked beans or mac & cheese, added to braised greens like collards, kale or chard (either by itself or over pasta or polenta). Minced, it can substitute cooked ground pork or beef in any number of preparations.
