Baked Artichokes

Seasoned, layered (onion, lemon, butter (of course) and baked on a baking sheet at 425F for 1 hour.

I placed a cast iron skillet in the oven and preheated the oven to 425F.

As the oven did it's thing, I prepped my artichokes by trimming off both ends with a sharp knife and placed them in a bowl of cold water as i sliced up a lemon and an onion.

Once I had those prepped, I began assembling each artichoke on sheets of foil large enough to wrap around the artichoke and it's layers.

I started with a slice of onion, followed by lemon, slices of Irish butter and rested the artichoke on top.

Before I topped the artichoke with the remaining layers, I seasoned it with salt and pepper.

When all the layers were in place, I wrapped the foil around it tightly. I repeated this with the rest of my artichokes and placed them in the preheated oven for an hour.

The artichoke and all the aromatics created a delicious, lemon butter sauce which I poured over steamed jasmine rice and ate with my artichoke and homemade hollandaise sauce.
