Cherry Tomato, Peach, Corn and Arugula Salad with Sweet Red Onion

Our local farm stand inspired me. All the ingredients are in season at the same time. The colors celebrate summer. —Laurie C

Ingredients
  • Salad
  • 1 pint red cherry tomatoes
  • 6 small ripe yellow peaches
  • 2 ears super fresh sweet corn
  • 1 homegrown sweet red onion
  • 5 handfuls baby arugula
  • Honey Vinaigrette
  • 1/4 cup white wine vinegar
  • 1/2 cup canola oil
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey
  • salt and pepper to tast
Directions
  1. Remove the kernels from the cob
  2. Peel the peaches and cut into large bite size pieces
  3. Cut the tomatoes in half
  4. Using a mandolin, slice the onion very thin, cut each slice in half into ribbons
  5. Gently toss the tomatoes, corn and peaches
  6. Place bed of arugula in salad bowl
  7. Spoon the tomato/peach mixture in the center
  8. Top with onion ribbons
  9. Dress lightly with vinaigrette

The peaches and tomatoes are a heavenly and inspired combination. Amazing that a vinaigrette is so good with peaches.

This was truly amazing--way bigger than the sum of its parts. I used white peaches and tarragon vinegar (since that was what I had to hand). It was voted "best damn thing you made this summer" by my family.

I bet this is delicious. Having paired tomatoes with mango, the peach must be really good, too! Full of summer tastes.
