This is my quick "go to" recipe for fresh spinach...much more preferable than the can my mom opened up when I was a kid. —inpatskitchen
Ingredients

1 pound
fresh baby spinach leaves

5 tablespoons
olive oil

4
cloves garlic, minced

1 tablespoon
water

1/4 teaspoon
crushed red pepper flakes (optional but really good)

Juice of one lemon

1/4 teaspoon
black pepper

Salt to taste
Directions

In a large saute pan, heat the oil, add the garlic and crushed red pepper and saute until the garlic becomes fragrant but doesn't brown.

Add the spinach leaves, a few handfuls at a time and stir after each addition. Add the water about halfway through adding the spinach.

Once the spinach has wilted add the lemon juice, salt and pepper, give it another minute on the heat and serve.
I think I get my love for food and cooking from my mom, who was an amazing cook. She would start baking and freezing a month before Christmas in order to host our huge open house on Christmas afternoon. I watched and I learned...to this day I try not to procrastinate when it comes to entertaining.
My cooking style is pretty much all over the place, although I'm definitely partial to Greek and Italian cuisine. Oh yes, throw a little Cajun in there too!
