cavatappi pasta

jar marinara sauce

frozen cut-leaf spinach, thawed & squeezed of excess water

large shallots, peeled & chopped

3 tablespoons
extra virgin olive oil

1 teaspoon
onion powder

1 teaspoon
garlic powder

1 teaspoon
kosher salt

3/4 teaspoon
paprika

3/4 teaspoon
black pepper

1/2 teaspoon
smoked paprika

6 tablespoons
freshly-grated Pecorino-Romano

Directions

Bring 5 quarts water to a boil in a large, covered pot. Salt boiling pasta water before adding pasta. Cook until firm, about 9 minutes, while stirring occasionally with wooden spoon.

Meanwhile, add olive oil to a deep, 12” non-stick skillet over medium heat. Add shallots and cook for 5 minutes, stirring with rubber spatula, before adding kosher salt. Add turkey and break up into small crumbles with spatula as it cooks. Add onion powder, garlic powder, black pepper, paprika and smoked paprika. Stir to combine. Add spinach and jar of marinara and stir to combine. Let simmer while pasta is cooking.

Drain cooked pasta and pour into skillet. Stir to fully combine pasta with sauce. Spoon into 6 bowls. Sprinkle each bowl of pasta with 1 tablespoon Pecorino-Romano. Serve immediately.
