Spiruguacamole and Wild Allium Florettes

Spirulina is a highly nutritious protein dense superfood. It has between 60-70% complete protein, has all the amino acids, and is anti-ageing. I could write a novel about Spirulina but there won't be enough space. This dish took minutes to make too, so is a really good filling snack to have if you are on the fly fly fly. It will keep you going for hours. One of the problems I find with it's flavour is that it is quite domineering and therefore hard for some to enjoy. I find it works very well with guacamole though combined with wild garlic (Allium) and a good virgin olive oil. Here is my recipe. I think it also looks really nice if you pipe it onto the plate. Serve with dehydrated crackers. —kirsty Hawkshaw

What You'll Need
Ingredients
  • 2 small ripe avocados
  • 1 teaspoon spirulina
  • 1 tablespoon good olive oil
  • 1 pinch salt
  • 1 teaspoon cumin powder
  • 1 tablespoon lemon juice
  • 3 leaves of wild garlic (or crushed garlic)
Directions
  1. In a mini food prep blend the ingredients until really smooth and creamy. I recommend you invest in some ear defenders when using any high speed machines to save your hearing.
  2. Using a piper of your choice pipe the mix onto a plate and serve with dehydrated crackers.
