Beetroot bread with dried fruits

Ingredients
  • 2 eggs
  • 7 ounces flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 80 milliliters walnut oil
  • 250g raw beetroot
  • 1/4 cup dried figs
  • 1/4 cup dates
  • 1/3 cup pecans, chopped
  • 1 tbsp dried apples
Directions
  1. Preheat oven on 300F
  2. Beat together eggs and sugar. Incorporate the flour, baking powder and baking soda. Add the walnut oil
  3. Wash and peel the beetroot, grate with a mandolin. Add to the flour mixture
  4. Dice the fig, apples and dates and add to the mixture as well. Finally, stir in the pecans.
  5. Bake for an hour and a half.
