Green Quinoa Patties

Ingredients
  • 2 cups Organic Quinoa
  • 1 packet Organic Spinach (large clamshell, about 11 oz), chopped finely
  • 2 Large Zucchinis , grated
  • 2 Large Leeks, chopped finely
  • 2 Organic Eggs
  • 1 teaspoon Cayenne Pepper, or more if you like spice!
  • 1 dash Chili Flakes
  • 1 cup Goat Cheese (or 1 10 oz package)
  • 1 teaspoon Olive Oil
  • 1 dash Salt
  • 1 dash Pepper
Directions
  1. Rinse quinoa. Bring 4 cups of salter water to a boil and add quinoa. Cook covered for 15 minutes. Let stand for 5 minutes, covered, and transfer to a bowl to cool.
  2. Heat olive oil in a large sauté pan. Add chopped leeks and sauté with salt and pepper until soft but not brown. Add zucchini and sauté for about 2 minutes. Add spinach and let wilt. Allow vegetable mixture to cool.
  3. Combine quinoa and vegetable mixture together in a large mixing bowl. Add eggs, goat cheese, cayenne, and chili flakes. Combine thoroughly. Season with salt and pepper to taste.
  4. Fill a quarter cup measurement with quinoa mixture. Place upside down on a lined baking sheet to form patty shape (the same way you may build a sand castle!). If the quinoa is not sliding out easily, rinse the measuring cup with water between each patty. Continue until all patties are formed.
  5. Bake for about 40 minutes at 400 degrees, or until brown and crispy.

These are really lovely, with a nice tang from the goat cheese. I used less liquid with the quinoa, and squeezed more water out of the zucchini, to get a drier batter the 2nd time I made them.

This was super deLISH, healthy and so easy to make! Instead of sculpting the patties, I used my 1/2 cup measurement to scoop in into a muffin pan and sprinkled the top with cheddar chz.

WOW, ellie, if this isn't a prize winning recipe, I don't know what is! I def will make this but i am trying to figure in advance what herbed or spiced version i might try. Right now I'm thinking dill or pimenton dulce and aleppo pepper... I'm also wondering about adding cooked dried beans to the mixture.....How exciting! Thx so much.
p.s. how do you think they would be if i removed the goat cheese and added tahini and lemon and a little sauteed garlic?

Definitely on the must try list. Am seriously thinking about baking them in my well-seasoned muffin tin. Am wondering though what one might substitute for the goat cheese to make these non-dairy . . . any suggestions? Thank you. ;o)

Hi there!
There are a few things you can do to substitute the goat cheese:
1. soak cashews overnight and then blend in a food processor with a little salt and lemon (for flavour) - this will resemble the consistency of cheese!
2. I would avoid lactose free cheeses and stick to all natural products like Daiya (non soy, non dairy, non GMO, gluten free, etc!)

I would also check with your nutritionist as many dairy free individuals can handle goats milk - it is far easier to digest!

This looks fantastic! Regarding people's dairy questions, there is a Mark Bittman recipe in the NY Times this week for quinoa patties - very similar to this but uses no eggs/dairy. It might be worth looking at to blend the two recipes together and suit your needs. Ellie's recipe uses way more vegetable though and seems a lot more flavorful to me. But maybe with less vegetables, there's less risk of them falling apart and needing those traditional binding ingredients.

I saw Mark Bittman's article as well - some of his flavour combinations sound great but I agree about the vegetables - these are packed with greens which does help with binding and flavor!
