Filled with healthy fats and protein. This recipe is dairy-free, gluten-free, and better yet GUILT-FREE! Top it off with some fresh berries or crushed almonds or pistachios for an easy, fast, and simple dessert :) Double the recipe and pipe into pre-made pastry cups and serve at your next party! —Stacy

Ingredients
  • 2 ripe avocados
  • 3-4 tablespoons almond milk (or any dairy-free substitute)
  • 1/4 cup cacao powder
  • 1/4 cup honey or other sweetener
  • 1 teaspoon vanilla extract
  • 1 dash cinnamon
Directions
  1. Puree all ingredients until desired mousse/pudding consistency.
  2. Top with fresh berries, or crushed almonds or pistachios.

I've made vegan chocolate mousse, using avocados, before. The recipe I used was slightly different. It was just avocados, cocoa powder, a little salt, a healthy pinch of expresso to bring out the chocolate flavor, some pure vanilla extract and sugar to taste. Then, you blend it smooth.

Two super important things: it only tastes good when it's allowed to chill. So, resist the urge to eat it right out of the food processor bowl.

Second, in my experience, this recipe really only works with Haas avocados. I tried making it with another kind that was larger with smooth, light green skin and it didn't come out well at all. Different varieties have different textures.
