This Waldorf salad recipe is slightly adapted from the 1939 cookbook Home at the Range. It feels thoroughly modern with bits of bitter greens and a dusting of paprika.

Ingredients

diced apples

1/2 cup
diced celery

1/2 cup
chopped walnuts

1/2 cup
mayonnaise

leaves escarole or chicory, chopped and stems removed

Smoked paprika, for garnish
Directions

In a medium bowl, mix apples, celery, walnuts, and mayonnaise. Arrange chopped lettuce on four plates and top with apple mixture. Sprinkle paprika on salad to finish.
