Classic Waldorf Salad

This Waldorf salad recipe is slightly adapted from the 1939 cookbook Home at the Range. It feels thoroughly modern with bits of bitter greens and a dusting of paprika.

Ingredients
  • 1 cup diced apples
  • 1/2 cup diced celery
  • 1/2 cup chopped walnuts
  • 1/2 cup mayonnaise
  • 5 leaves escarole or chicory, chopped and stems removed
  • Smoked paprika, for garnish
Directions
  1. In a medium bowl, mix apples, celery, walnuts, and mayonnaise. Arrange chopped lettuce on four plates and top with apple mixture. Sprinkle paprika on salad to finish.

Definitely a childhood throwback, still delicious. But interesting that a finishing sprinkle of paprika is seen as a modern twist - with Hungarian/Eastern Euro grandparents, my association is the complete opposite: paprika (on EVERYTHING) = grandma for me.

I found this article very interesting. Waldorf Salad was always on our Thanksgiving and Christmas dinner tables - this 'updated' version is what we made with the addition of raisins. Not sure when someone decided raisins should be part of the mix...funny, we never have it any other time.
