Author Notes: This radish and herb salad, from Engin Akin's cookbook Essential Turkish Cuisine, has no fat of any kind—and involves no sacrifice, no straining to compensate. Adapted slightly from Essential Turkish Cuisine (Stewart, Tabori, and Chang, October 2015).Genius Recipes

Serves: 6 as meze
Prep time: 20 min

Ingredients

  • 2 cups (230 grams) diced or sliced red radishes
  • 1/2 cup (10 grams) chopped mint or tarragon
  • 3/4 cup (15 grams) chopped parsley
  • 2 teaspoons sumac
  • 1 garlic clove, crushed
  • 1 tablespoon tomato paste, diluted with 2 tablespoons cold water
  • 3 tablespoons pomegranate molasses
  • 3 tablespoons crushed ice
  • Salt

Directions

  1. In a bowl, toss together the radishes, mint or tarragon, parsley, sumac, and garlic.
  2. Add the diluted tomato paste water, pomegranate molasses, and ice and toss. Season with salt to taste and serve immediately in a chilled bowl.

I made this last night for a dinner party of 6. I had a "small plates" menu and placed this salad in the middle of the courses. I made it with tarragon after much debate! Didn't change one thing! It was VERY unusual for me to introduce an untried recipe-especially for a very discriminating group! But this facinated me, looked beautiful, and I included it to have something "fat free", gorgeous,and the ingredients........... fascinating! It was an absolute hit! Amazing, a keeper for always! Thank you!

This sounds wonderful and will go perfectly with my Moroccan chicken with preserved lemons and olives! Can't wait to pick up the ingredients.

Do you serve it before the ice chips have melted? Is it strange to be crunching through the ice while you're eating the salad?

You can find it in any stores that cater to middle eastern cuisine or order it online. Pomegranate Molasses is great in many other recipes. You'll find lots of ways to enjoy it's richly sweet-tart flavor!
