I created this drink for a large dinner party, and couldn't refill glasses fast enough! It's really simple, refreshing, and a great start to a meal-I served it in small shot glasses with the hors d'oeuvres. Feel free to add a splash of really good vodka or Bacardi to this one, to make it an 'adult beverage'. —Mariya

Ingredients
  • 15 cucumbers-pealed
  • 1 cup fresh mint
  • 1/2 cup vanilla yogurt
  • 4 tablespoons sugar
Directions
  1. Using a juicer, juice the cucumbers.
  2. Using a mortar and pestle, grind all of the mint well (until the pieces are very tiny).
  3. Add mint, yogurt, and sugar to the cucumber juice. Mix well (by hand or in a blender) and strain.
  4. Refrigerate and serve cold (optional: add a splash of vodka or Bacardi if desired).

Made it tonight with the large cucumbers--I didn't peel them first--my juicer handles the peel. It was very refreshing! When I make it again, I'll let it steep with the mint a little longer, and use a little less sugar --it was a bit sweet for my taste. My sister suggested a splash of sparkling water--I'll try that tomorrow with the leftovers.

I figured as much. I had to get the big ones--my grocery store didn't have organic small ones and I only juice organic vegs. I'll let you know!

I'm testing this for editors' pick this weekend and I have a question for you. Did you use Kirby cucumbers (small pickling ones) or the regular large cucumbers. 15 seems like a lot of cucumbers to make a quart of juice--but I usually juice cucumber with other fruits so I could be wrong.

I'll let you know how it turns out!
