This is perfect for a spring menu, as an appetizer or something to nibble on. It is really easy to prepare and it tastes delicious. Spread it on lavash, pitta bread or crackers, it is all so good. —Virginie Degryse

What You'll Need
Ingredients
  • 1 cup ricotta cheese
  • 1 1/2 cups peas ( frozen, thawed )
  • 1 shallots, minced
  • salt and pepper
  • olive oil
Directions
  1. Put the ricotta, 1 cup of peas, the shallot, salt and pepper and 1 tbsp of olive in the blender and mix.
  2. Spread the ricotta on toast or crackers and garnish with the remaining peas, sprinkle with salt and pepper and a drizzle of olive oil.
  3. Et voila! Bon Appetit!
