Ingredients
  • 1 sweet potato
  • 3 slices smoked salmon
  • 1/4 cup arugula
  • 3 tablespoons creme fraiche
  • 1/2 avocado, sliced
  • 1 tomato, sliced
Directions
  1. Slice the sweet potato lengthwise into 4 slices
  2. Place each slice in the toaster and toast until soft (took me 3 rounds in the toasters)
  3. Once cooled, top 2 slices with arugula, smoked salmon and sliced tomato.
  4. Top the other 2 slices with creme fraiche, sliced avocado
