Savory Stovetop Oats with Avocado, Greens, and Kimchi

What You'll Need
Ingredients
  • 1/2 cup oats
  • Salt and pepper, to taste
  • 1 egg
  • 1 tablespoon ghee
  • Handful of loosely packed greens (like kale or baby spinach)
  • 1 pinch garlic powder
  • 1/4 cup kimchi
  • 1/2 avocado, sliced
  • Hot sauce (optional)
Directions
  1. Combine the 1/2 cup oats cooked with 3/4 cup purified water over the stovetop. Bring to a boil, then stir until the oats are softened. Add a pinch of salt and mix it all up.
  2. Meanwhile, add 1 tablespoon ghee to a skillet and melt. Crack an egg into the ghee and fry until the edges are crispy, about 4 minutes. Remove the egg from the pan and add the greens. Sauté with salt, black pepper, and garlic powder until just wilted.
  3. Add oats to a bowl. Top with sautéed greens, kimchi, fried egg, and avocado slices. Add a few dashes of hot sauce, if using.

I’m not one to typically leave reviews but this savory breakfast was the best surprise. I had some kimchi I wanted to use up, and this was the perfect application. The ghee adds an amazing flavor to the dish, highly recommend! I added some black garlic sesame oil I have laying around when sautéing my greens for some extra flavor. Highly reco all around!
