A healthy and flavorful combination of bulgur wheat, cucumbers, green onions, tomatoes, and fresh cilantro topped with a ginger soy dressing. It's also vegan. —Dash of Amy

Ingredients
  • Bulgur Salad
  • 3/4 cup Bulgur wheat
  • 2 cups Water
  • 1 cup Cucumber, peeled and diced
  • 1 Tomato, finely chopped
  • 1 Bunch green onions, sliced thin
  • 1/2 cup Fresh cilantro, finely chopped
  • 1 teaspoon Salt
  • Dressing
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 3 tablespoons Soy sauce
  • 1 tablespoon Ginger paste, or freshly grated ginger
  • 1 Garlic clove, minced
Directions
  1. Pour 2 cups of boiling water over the bulgur wheat, and let it sit for 30 minutes.
  2. Strain off any excess water after 30 minutes.
  3. Combine bulgur wheat with other salad ingredients and mix well.
  4. Whisk the dressing ingredients together and pour over the salad.
  5. Mix well and refrigerate for at least one hour.
  6. Serve with pita bread.
