Quinoa and lentil salad with arugula

Perfect vegan main course or side dish. Add your favorite cheese if desired. —Carol P.

  • Prep time 20 hours
  • Serves 6
  • Dressing
  • 3 tablespoons Fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 cup Olive oil
  • Dash Salt and pepper
  • Salad
  • 1 cup Green lentils
  • 1 cup Quinoa
  • 3 Carrots, diced
  • 1 Shallot diced
  • 1 cup Cherry tomatoes, cut in half
  • 1 cup Arugula, packed
  • 1 Bay leaf
  • 1 Clove of garlic
In This Recipe
  1. Mixed together dressing ingredients, set aside.
  2. Prepare and cook quinoa according to instructions. Set aside to cool.
  3. Prepare and cook lentils according to instructions. Add one clove of garlic, one bay leaf, and salt and pepper to water. Set aside to cool.
  4. Meanwhile, cut up tomatoes, shallots, and carrots.
  5. Combine all ingredients, except arugula. Mix in dressing.
  6. Add arugula and lightly toss. Enjoy!
