Ingredients
- Dressing

Fresh lemon juice

Dijon mustard

Salt and pepper

Green lentils

Quinoa

Carrots, diced

Shallot diced

Cherry tomatoes, cut in half

Arugula, packed

Bay leaf

Clove of garlic
Directions

Mixed together dressing ingredients, set aside.

Prepare and cook quinoa according to instructions. Set aside to cool.

Prepare and cook lentils according to instructions. Add one clove of garlic, one bay leaf, and salt and pepper to water. Set aside to cool.

Meanwhile, cut up tomatoes, shallots, and carrots.

Combine all ingredients, except arugula. Mix in dressing.

Add arugula and lightly toss. Enjoy!
