Morning Glory Muffins

These super delicious gf / paleo muffins are packed so many natural fresh ingredients, with lots of healthy fat and protein to keep you going all morning, afternoon or evening long. We love to cut them open and eat them like a sandwich dripping with almond butter.

Dry Ingredients

  • 1 tablespoon Flax
  • 1 tablespoon Hemp
  • 2 cups Paleo Flour (Bob's Red Mill)
  • 1/2 cup Super Fine Almond Flour
  • 1/2 cup Coconut Sugar
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1 tablespoon Cinnamon
  • 1 pinch Salt

Wet Ingredients

  • 1 apple (grated)
  • 2 cups grated carrots (peeled first)
  • 3/4 cup coconut oil / ghee
  • 1/2 cup maple syrup
  • 1/2 cup almond butter
  • 4 eggs
  • 1 teaspoon vanilla

  1. In a large bowl combine all the dry ingredients
  2. In a separate bowl combine all the wet ingredients 
  3. Slowing add the wet ingredients to the dry ingredients and mix until they are thoroughly blended into a nice consistent batter. It should be full of texture with all the grated fruit and veg, but no dry lumps!
  4. Spoon the batter into your muffin tin and bake for 45 mins at 375F
