Ingredients
- Salad ingredients

4 cups
Baby Spinach

Pears peeled and sliced long

Cara cara Oranges into segments

12 ounces
Feta cheese chunks

1 cup
Pistachios
- Dressing
-
6 tablespoons
Oil (grape seed or canola)

4 tablespoons
Orange juice

2 tablespoons
Lemon juice

2 teaspoons
Honey

1 tablespoon
Orange zest

1/2 teaspoon
Salt
Directions

Prepare salad directly onto the plates.
Start with 1 cup of baby spinach on the bottom of each plate.

Top the baby spinach with 1/2 pear sliced.
Top with 1/2 cara cara orange segments.
Top with feta cheese chunks as desired.
Top with 1/4 c. Pistachio nuts

For the Dressing
Combine all the ingredients into a small bowl and whisk together.

Pour dressing onto each salad plate.
