This salad is light and refreshing bursting with Flavor and super healthy! —Maria

  • Serves 4
Ingredients
  • Salad ingredients
  • 4 cups Baby Spinach
  • 2 Pears peeled and sliced long
  • 2 Cara cara Oranges into segments
  • 12 ounces Feta cheese chunks
  • 1 cup Pistachios
  • Dressing
  • 6 tablespoons Oil (grape seed or canola)
  • 4 tablespoons Orange juice
  • 2 tablespoons Lemon juice
  • 2 teaspoons Honey
  • 1 tablespoon Orange zest
  • 1/2 teaspoon Salt
In This Recipe
Directions
  1. Prepare salad directly onto the plates. Start with 1 cup of baby spinach on the bottom of each plate.
  2. Top the baby spinach with 1/2 pear sliced. Top with 1/2 cara cara orange segments. Top with feta cheese chunks as desired. Top with 1/4 c. Pistachio nuts
  3. For the Dressing Combine all the ingredients into a small bowl and whisk together.
  4. Pour dressing onto each salad plate. 😊
