An easy pasta recipe great for weeknights and made even better with homegrown and local ingredients when possible. —Oh.hi.food

What You'll Need
Ingredients
  • 3/4 pound Pasta
  • 4 pieces Garlic
  • 4 Tomatoes
  • 1/2 cup Pasta water
  • Parmesan cheese
  • to taste Salt and pepper
  • Garlic (or olive) oil
  • 3 tablespoons Basil
Directions
  1. Boil pasta in well salted water according to directions. In the meantime slice garlic and chop tomatoes.
  2. Drain pasta, reserving 1/2 cup of the salted water.
  3. Add oil to pan and saute garlic until fragrant.
  4. Add tomatoes and cook until soft and starting to caramelized. Season lightly with salt and pepper.
  5. Add 2 tablespoons of the basil and pasta water and cook down for about 5 minutes on medium low heat until thickened.
  6. Add pasta.
  7. Add parmesan and mix well.
  8. Top with the rest of basil and parmesan, season with salt and pepper to taste.
  9. Enjoy!
